Chicken Noodle Soup, I would like to call it Mom’s  Chicken Noodle Soup. It is an other good Old Mennonite Recipe,
these soup is very famous for a bring away meal, since it has a lot of healing spices. But it’s also
very loved by my Kids. It’s a comforting Soup. Besides a hot bowl of homemade soup is always

Wash a Whole Chicken, cut it up.


Chicken Noodle Soup

Cook the Chicken in Water, add Salt, Onions and carrots. If you are like me, I wonder if I had to skim the stock while cooking it. I made a test in 2 pots, with the same amount of chicken in each pot, and discover that as long as you keep the heat low and have a fine-mesh strainer, you’re safe letting the stock be without skimming it. As for the fat that accumulates on the surface, I find it easiest to remove once the stock has chilled and the fat has congealed on the surface. The not-skimmed stock was a tiny bit more clear than the skimmed one, which definitely contradicted my expectations.

Yeah its super delicious, and very healthy.

You can make lots and can it, it will stay good in the refrigerated for a whole month or even longer.


1 whole Chicken cut up

8 lt Water

1 Onion

1 Carrot

2 T. Salt

3 T. Vegeta

2 T. Knorr Chicken Base

Wash the chicken, cut it up. In a large pot  ad water, chicken, salt and onion and carrot bring to boil, lower the heat and simmer for 2 hours.

Add Vegeta Salt and Knorr Chicken Base.


4 Anise Stars

8 Cloves

2 Bay leaves

3 dried Ginger pieces

1/2 Cinnamon stick

5 Peppercorns

Place everything in a spice ball and add to stock, cook for 15 min.

Before serving strain the stock with a fine mesh strainer.

In a  different pot cook fine egg noodles according to directions.

Add to stock and garnish with parsley.
